Why Black Diners Get Poorer Service From Wait Staff And Bartenders Than White Customers

When Black diners get poorer service from wait staff and bartenders than white customers, it’s more likely because of racial bias than the well-documented fact that they tip less, according to a new survey I recently published. To reach that conclusion, my colleague Gerald Nowak and I recruited over 700 mostly white full-service restaurant servers and bartenders to review a hypothetical dining scenario that randomly involved either white or Black customers. We then asked them to predict the tip that the table would leave, the likelihood that the table would exhibit undesirable dining behaviors and the quality of service they would likely provide the table. Low-wage service workers are facing new emotional hazards in the workplace during COVID-19

The big idea Low-wage service workers increasingly are facing new physical and emotional hazards in the workplace as a result of the coronavirus pandemic, according to interviews with workers we conducted in April. We found that in addition to being afraid and anxious about their own health and possible exposure to COVID-19 while working, these employees said dealing with unpredictable customer emotions was taking an additional toll. The workers we spoke with reported that interactions with customers were becoming emotionally charged over issues such as mask requirements and other safety guidelines. Social distancing is no reason to stop service learning – just do it online

At Troy University in Alabama, students went online to help a county with a high infant mortality rate in the state of Georgia to analyze health disparities and develop solutions. At Cornell University, where I teach, law students are providing legal services online to death-row inmates in Tanzania and children and young farmworkers in upstate New York. At five state universities in the U.S. heartland, students are helping Michigan towns create government websites. These are all examples of “e-service learning” – that is, service learning that takes place online.
